Nutty Crunch Granola

Something I’ve learned about myself.... I LOVE crunch. I literally need something to chomp down on when I eat, or I don’t truly feel satisfied. So when I feel like splurging I buy some granola... and that granola is eaten with breakfast, dessert, or on its own as a snack. However, most granolas that have quality ingredients can be on the pricey side... and when I eat it so often you can imagine that this may become an expensive craving. Solution? MAKE MY OWN! Not only can I buy all ingredients in bulk, so I’m able to customize it to my liking, and with the ingredients I prefer, it’s cheaper too!!! So OF COURSE, I wanted to share it with you as well! It’s also super duper simple.... which is another thing I LOVE! Don’t like some of the nuts and seeds I used, no worries at all, simply just swap them out or add extra of the ones you enjoy! Paleo? Leave out the oats and add extra nuts and seeds! Use this to top your favorite smoothie, sprinkle on your ice cream, or eat by itself with milk of choice! 

Nutty Crunch Granola 

Ingredients

  • 2 cups oats
  • 1/2 cup shredded coconut
  • 1/2 cup cashews, chopped 
  • 1/2 cup walnuts, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup pepitas
  • 1/4 cup pecans, chopped 
  • 1/4 cup coconut oil, melted 
  • 1/3 cup maple syrup
  • 1/2 tbsp vanilla extract

Instructions: 

  1. Preheat oven to 400 degrees Fahrenheit
  2.   In a medium bowl combine all ingredients until oats and nuts are well coated with the coconut oil and maple syrup.
  3. Pour mixture onto a baking sheet and spread evenly. 
  4. Bake for 15 mins, checking about half way and gently shaking baking sheet to mix up cooked and uncooked parts. 
  5. Remove, and store in an airtight container and ENJOY!
