Yes, you can go to Chipotle and get your burrito bowl, but my question is WHY would you do that when you can make one just as good at home!? Easy to make, and perfect to prep at the beginning of a week!

Ingredients:

Chipotle Chicken
- 1/2 onion, finely chopped
- 2 large cloves garlic, minced
- 2 tbsp chipotle adobo sauce
- 1 tbsp ancho chili powder
- 1 tsp + 1/2 tsp cumin
- 1/4 tsp salt
- 1 tbsp avocado oil
- 1 tsp + 1/2 Oregano
- 3 pounds chicken

Cilantro Lime Rice
Instructions:
- CHICKEN: In a high speed blender combine all ingredients for the chipotle chicken except the chicken. Place chicken in large bowl and pour blended mixture to coat. Cover and let marinate in fridge for at least 30 mins up to 24 hours. TO COOK:remove chicken from bowl, and chop into small cubes. Heat a pan to medium heat, spray with oil of choice, and cook until browned and/or white and not pink.
- PICCO: finely chop onion, jalapeño, cilantro, and tomato. In a medium sized bowl add lime juice, salt and pepper. Mix and place in the fridge.
- CORN SALSA: In a medium sized bowl combine all ingredients, cover and place in fridge.
- CILANTRO LIME RICE: Cook brown rice according to directions on bag, OR pour 2 frozen brown rice bags into a medium sized pan, on medium heat. Cook until brown rice is fully cooked or thawed. Add lime, lemon, salt and pepper, turn down to low heat and let sit. Right before serving mix in cilantro.
