Homemade Thin Mints (GF/DF)

Guys I am sooooo excited about this one, because these are delicious!!!! I love the good ol’ Girl Scout Thin Mints, but I wanted to recreate them with even better ingredients, so I did! So yes it’s great to support the Girl Scouts, and you still can…. but it’s also a really good thing to support your body and feed it quality ingredients even when it’s in the form of dessert!

Now let’s do a little comparison..... 

Original Thin Mints 

ENRICHED FLOUR (WHEAT FLOUR, NIACIN, REDUCED IRON, VITAMIN B1 [THIAMIN MONONITRATE], VITAMIN B2 [RIBOFLAVIN], FOLIC ACID), SUGAR, VEGETABLE OIL (PALM KERNEL, PALM, AND SOYBEAN OIL), COCOA, CARAMEL COLOR, CONTAINS 2% OR LESS OF COCOA PROCESSED WITH ALKALI, INVERT SUGAR, LEAVENING (BAKING SODA, MONOCALCIUM PHOSPHATE), CORNSTARCH, SALT, SORBITRAN TRISTEARATE, SOY LECITHIN, NATURAL AND ARTIFICIAL COLORS, OIL OF PEPPERMINT.

My Thin Mints 

Almond flour, cacao powder, coconut sugar, refined coconut oil, mint extract, egg, Himalayan pink salt, dark chocolate chips. 

As you can see.... the ingredients look somewhat similar; flour,oil,sugar, chocolate, mint..... except mine are the less processed, more nutritious versions, and there are none of those unnecessary “natural flavors & colors”.... like what even are those!?

The one main change between the two, is that mine are gluten free, and mine contain egg, unlike the originals which are vegan. 

Want to know the best part? Trev, the man whose sister sold Girl Scout cookies from age 6-18, LOVES THEM. Even though he was surrounded by the real deal for a lot of his life, he sincerely liked my remake. I don’t usually buy certain things like Girl Scout cookies because I personally don’t eat them, and if Trev doesn’t eat them then they go to waste. So when I can recreate an old favorite with better for you ingredients and we both can enjoy the final product it makes me so happy!

Homemade Thin Mints

Description of Recipe

Makes: 12 Cups

Ingredients:
    Cookie
  • 1 cup almond flour
  • 1/2 cup cacao powder
  • 4 Tbsp. coconut sugar
  • 2 Tbsp. coconut oil
  • 1 egg
  • 1/2 tsp. mint extract
  • Coating
  • 1 cup dark chocolate chips (I used Enjoy Life)
  • 1 Tbsp. coconut oil
  • 3/4 tsp. mint extract

Instructions:
  1. Preheat oven to 400 degrees Fahrenheit, line a small cookie sheet with parchment
  2. In a medium bowl combine all cookie ingredients.
  3. With hands form into a large ball.
  4. On a piece of parchment paper on counter, roll out cookie dough until its about 1/2 inch thick.
  5. Using a small circle cookie cutter, OR a 1/4 cup metal measuring cup, create circular cookie cut outs.
  6. Place cookies on cookie sheet, and bake for 10 minutes.
  7. Place chocolate chips and coconut oil in bowl, set aside.
  8. Once cookies are finished cooking, remove from oven and let them cool completely. Option to place in freezer to speed up the process.
  9. Once the cookies are cool, melt the chocolate chips and coconut oil in the microwave 30 seconds at a time, removing to stir, until fully melted.
  10. Remove and mix in mint extract.
  11. Dip cookies in the mixture until fully coated.
  12. Place cookies on a plate or small cookie sheet lined with parchment paper.
  13. Place in freezer until chocolate coating is fully hardened.
  14. Store in freezer, pull them out as you please, and ENJOY!
