Mint Oreos (GF/DF)

As I am writing this, I am also eating sitting here eating one of these ( probably my 10th “taste test” of the day), and I can hardly contain my excitement!! Because they are really good…. and it’s been a long time coming of trying to perfect them! But today is the day I finally did, and I am feeling truly accomplished now that I have the recipe to share with you all! The cookie is crispy and crunchy, and the filling is creamy and the perfect amount of minty! I wanted to do a fun green mint filling because it’s St. Patty’s Day!!! No food coloring here, just some fun colored good for you ingredients! Not a fan of mint? Simply ditch the mint extract, and do the plain vanilla frosting for a plain Oreo, or better yet slather on some natural PB… YUM!

Mint Oreos (GF/DF)

Crispy crunchy cookie, and a creamy mint filling.

Makes: 6 cookies

Ingredients:
    Cookie
  • 1 cup almond flour
  • 1/2 cup cacao powder
  • 4 Tbsp. coconut sugar
  • 2 Tbsp. coconut oil
  • 1 egg
  • Filling
  • 1/2 cup Simple Mills Vanilla Frosting
  • 1 Tbsp. Matcha
  • 1.5 tsp. mint extract

Instructions:
  1. Preheat oven to 400 degrees Fahrenheit, line a small cookie sheet with parchment
  2. In a medium bowl combine all cookie ingredients.
  3. With hands form into a large ball.
  4. On a piece of parchment paper on counter, roll out cookie dough until its about 1/2 inch thick.
  5. Using a small circle cookie cutter, OR a 1/4 cup metal measuring cup, create circular cookie cut outs.
  6. Place cookies on cookie sheet, and bake for 10 minutes.
  7. Meanwhile, in a small bowl combine all ingredients for filling.
  8. Remove cookies from oven, let cool completely, then spread filling onto one half of cookie, top with another cookie and ENJOY! Store in the fridge or freezer or share with your friends and fam!!
