Ground Turkey Sloppy Joe's

Sloppy Joes are such a comfort food for me. I go through phases where I just craveeee them! Using ground turkey is a leaner option, and still tastes super yummy! Great for a comforting meal on a rainy day eaten from a sweet potato, OR a summer time meal eaten on a bun, and paired with some corn on the cob and a green salad!

Ground Turkey Sloppy Joes

Looking for a healthier take on an old classic? Give these ground turkey sloppy joes a try! Eat in a baked sweet potato OR stick to the bun because you already lightened things up by swapping the beef for the turkey! ;)

Makes: 4 servings

Ingredients:
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1/2 cup carrot, chopped
  • 1.5 pounds ground turkey
  • 1 tbsp honey
  • 1/2 tbsp paprika
  • 3 cloves garlic
  • 1 can tomato sauce
  • 1/4 cup ketchup

Instructions:
  1. Heat a pan to medium heat, spray with oil, and sautee until transluscent. Add pepper and carrot, sautee until softened.
  2. Add ground turkey and cook until browned.
  3. Add remaining ingredients, mix well, turn down to a simmer and let sit for at least 5 minutes to allow flavors to meld together.
