Sweet Potato Pancakes (Single Serve, GF/ DF)

Pancakes made with quality, good for you ingredients! Delicious and nutritious. What better way to start the day!

Makes: 4 small pancakes

Ingredients:
  • 2 tbsp sweet potato
  • 2 tbsp cassava flour
  • 1 tbsp almond flour
  • 1 tsp vanilla
  • 1 egg
  • 1/4 tsp baking powder
  • 1 tsp honey
  • Optional: 1/2 scoop Ancient Nutrition Vanilla Bone Broth Protein

Instructions:
  1. Heat a medium sized skillet to medium heat, and spray with oil.
  2. In a small bowl whisk together all ingredients.
  3. Using 1/4 cup, make 4 small pancakes in the heated pan. Cook until bottom appears cooked, about 2 mins, flip and cook another 2 mins. Remove and top with desired toppings!!
