Simple Turkey Burgers w/ Sweet Potato Bun
As the days get longer, and the sun shines more than 2 hours…. I’m starting to get real excited for grilling season! Burgers, kabobs, steak, grilled veggies. So much deliciousness!!! My thought is, why wait until the summer when you can have burgers year round! I had some fresh herbs on hand so I thought I would throw those into the mix, along with some bell pepper to create a flavor packed burger. I used my Griddler, (which is part time grill, part time griddle and I love it!) but these can easily be cooked on the stove top in a skillet or grill pan. Using a griddler or a grill pan would the perfect way to get those grill markers without the need to freeze outside next to the BBQ when you want some burgers but its still winter! I hope you give these burgers a try! :)
Makes: 6 patties
Prep time: 10 mins
Cook time: 12-15 minutes
Total time: 22-25 mins
Ingredients:
1.5 pounds ground turkey
1/4 cup fresh parsley, finely chopped
1/2 cup green onion, finely chopped
1/2 cup red pepper, finely chopped
1 tsp garlic powder
1 tsp salt
1/4 tsp pepper
Optional Sweet potato bun:
Sweet potatoes
Oil
Salt
Pepper
Instructions:
In a large bowl, mix just enough so that all ingredients are incorporated. (careful to not over mix or else the burgers will become too dense)
Heat a skillet on medium high heat, and coat lightly with oil.
Form meat mixture into 6 patties, placing on a plate and gently pressing down until desired thickness.
Cook in skillet about 4-6 minutes per side or until internal temperature reaches 165 degrees Fahrenheit.
Serve on a whole wheat bun, in lettuce leaves, or like I did here in a sweet potato bun!
Optional air fried Sweet potato bun:
Slice a large sweet potato into an even amount of round slices (about 1/4-1/2 inches in width)
Add sweet potato slices to air fryer, coat lightly with spray oil, salt and pepper.
Cook potato slices at 400 degrees Fahrenheit for 15 mins, or until soft to fork touch but not mushy.
Add desired burger toppings, burger patty, and enjoy!
