Pumpkin Spice Bites
Often times when you set no expectations, wonderful things can happen. For example, these little bites of goodness! I knew I had pumpkin puree that I needed to use up, I also knew I wanted some sort of snack to result, but I didn't have any expectations on how it would turn out. After one try of mixing ingredients together I had success and a delicious snack to take on the go! If you are a busy person, this recipe is for you for several reasons. These takes a whole 10 minutes to make, they are super easy to throw in a bag or container and run out the door, and they provide your busy body with some fiber to keep your gut happy despite a crazy schedule!
Pumpkin Spice Bites
Time: 10 mins
Makes: 8 balls
Ingredients:
1/2 cup oats
2 Tbsp. pumpkin puree
1 Tbsp. maple Syrup
1 Tbsp. nut butter ( I used almond butter, but peanut, cashew, or sunflower seed butter will work great!)
1/4 cup toasted pumpkin seeds ( I popped mine into my air fryer for a couple mins, but you can also roast at 400 degrees F in the oven WATCH CLOSELY)
1/4 cup raisins ( I like to get unsweetened or those sweetened with fruit juice from the bulk section) OR dark chocolate (I like 70% + I used Theo chocolate, mini chocolate chips work well here too )
1/2 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1/4 tsp salt
Instructions:
In a medium sized bowl add all ingredients
Mix well until dry ingredients are combined throughly with the wet.
Form mixture into 8 equally sized balls.
Place in air tight container and store in the refrigerator for up to a week, or freeze for up to 1 month.
