Crockpot Veggie Packed Turkey Chili

When I was younger, one weekend day in October consisted of family time, pumpkins, and eating delicious chili made by my mama. We would make a trip to the pumpkin patch as a big ol’ group. Then return to my parents home. Dad, sisters, nieces, nephews, all spread out across our living room floor, sitting upon either a tarp or newspaper. Each of us carving our little or BIG (mostly me) pumpkins we got from the patch. Following carving would come a yummy bowl of the big batch of chili my mom had made. Topped w/ Fritos, shredded cheese & sour cream! 

So every year as the season begins to change from Summer to Fall, this memory comes about, and I get so excited at the thought of pumpkin carving, and a yummy bowl of chili. Because to me, a bowl of warm chili, brings back the happiness I felt at that moment when I was younger. 

I love this recipe, because it still allows me to be nostalgic, but also is a little more nutrient packed due to all the added veggies & toppings like fresh cilantro, green onion, crunched up tortilla chips & even some avocado! 

Crockpot Veggie Packed Turkey Chili

Makes : 6-8 servings

Prep time: 15 mins

Cook time: 6 hours

Ingredients:  

  • 1-2 pounds ground turkey, cooked (depends on how much meat you’d like)

  • 2 yellow squash,chopped

  • 1 red pepper, chopped

  • 3 stalks celery, chopped

  • 2 carrots, chopped

  • 2 parsnips, chopped

  • 3 tbsp tomato paste

  • 2 cans diced tomatoes

  • 2 cans kidney beans

  • 1 medium onion, fined diced

  • 3 cloves garlic, minced

  • 5.5 cups chicken or vegetable broth

  • 3 tbsp chili powder

  • 3 tsp cumin

  • Salt & pep to taste

Optional toppings:

  • cilantro

  • green onion

  • avocado

  • shredded cheese

  • toetilla chips or strips

  • sourcream

Instructions:

  1. Heat a pan on the stove to medium heat, drizzle with oil, and cook ground turkey until brown, drain any liquid released from turkey, set aside.

  2. Place all prepared ingredients into a crockpot, stir, cover and cook on low for 6 hours.

NOTE: feel free to add whatever veggies you love, and add more seasoning as desired! That’s the best part of cooking, you really can customize to your preferred taste!!
