Asian Chicken Lettuce Wraps
If you love a meal that takes 30 minutes to make, has an asian flare, and is sure to please just about anyone…. here is the meal for you! I love making chicken lettuce wraps, because it’s a light meal, where you can easily change the flavors of the chicken to satisfy whatever your craving may be! I was craving asian food, so this recipe includes toasted sesame oil, and coconut aminos to give the asian flavor I was looking for!
Asian Chicken Lettuce Wraps

Total time: 30 min
Serves : 4-6 people
Ingredients:
1 -2 heads of romaine lettuce, separated, rinsed, and dryed
1 pound ground chicken
1 Tbsp. avocado oil OR spray oil of choice
1 cup red bell pepper, chopped
3/4 cup onion, chopped
1 cup cooked brown rice ( I use Trader Joe’s organic frozen brown rice - 3 mins in microwave, OR precook brown rice on the stove)
Sauce
6 Tbsp. Coconut Amino’s (can use soy sauce as well)
1 Tbsp. + 1 tsp. cashew butter (can use peanut butter as well)
1 Tbsp. toasted sesame oil
1 Tbsp. rice vinegar
2 Tbsp. honey
1/2 tsp. Garlic powder
1/4 tsp. ginger powder
Instructions :
Whisk together sauce ingredients until well combined. If the cashew butter is more firm, you may want to microwave for 30-60 seconds to melt it and ensure it mixes well into chicken.
Heat a frying pan or wok to medium heat, spray with oil of choice OR drizzle with 1 tbsp avocado oil. Once hot, add ground chicken.
Cook until some pieces are beginning to brown, add onion and cook until translucent. (Depending on chicken used, you may need to strain a little bit of the liquid that comes from the chicken once its cooked)
Add peppers and cook about 5 minutes or until peppers become soft.
Add brown rice, and then sauce, and simmer on low heat until the chicken mixture and veggies are evenly coated and everything is heated through.
Serve in lettuce leaves.
