Crockpot White Chicken Chili

If you’re looking for a meal that takes minimal time and thought to prep, then this is the meal for you! If you have a crockpot, all you need to do is make a quick stop to your local market, grab the ingredients listed below, do a little bit of chopping, toss everything into the crockpot, and it basically does the rest for you! The only other step to this recipe is the blending , which is done in order to thicken the chili and add some creaminess without adding any dairy! I love topping mine with tortilla chips, avocado, and fresh cilantro. You can also top with shredded cheese, and/or sour cream if you’d like!

Crockpot White Chicken Chili

Serves: 6

Prep time : 5 mins

Cook time: 4-6 hours on low OR 2-4 hours on high

Ingredients:

  • 2 pounds of chicken (tenders or breasts)

  • 4 cups chicken broth

  • 2, 15 oz cans white beans (Great Northern, Cannellini, White Kidney beans)

  • 2, oz cans green chiles

  • 2, 15 oz can corn ( OR can use 1-2 fresh cobs, uncooked, cut off the cob)

  • 1 medium yellow onion, finely diced

  • 3 cloves garlic, minced

  • 2 tsp ground cumin

  • 1 tsp dried oregano

  • 1 tsp salt

  • 1/4 tsp cayenne pepper

Topping options:

  • sliced avocado

  • minced fresh cilantro

  • dollop of sour cream OR plain greek yogurt

  • sprinkle of shredded cheese

  • tortilla strips or crunched up tortilla chips

  • fresh lime juice

Instructions:

  1. Place chicken in the bottom of a 6-quart or larger slow cooker. Top with the chicken broth, white beans, green chiles, corn, garlic, onion, cumin, oregano, salt, and cayenne. Stir to combine. Cover and cook on low for 4 to 6 hours or high for 2 to 4 hours, until the chicken is cooked through. Remove the chicken breasts to a plate. Once cool enough to handle, shred and set aside.

  2. With an immersion blender puree a portion of the chili to thicken it, leaving some of the beans whole. (You can also transfer a few ladlefuls of the chili to a food processor or high speed blender and roughly blend, then stir the blended portion back into the chili.) Stir in the shredded chicken and cilantro. Portion into bowls and top with whatever toppings you enjoy!
