Chewy Gingerbread Cookies (GF/DF)

Makes: 12 cookies

Prep time: 10 mins

Bake time: 8-10 mins

Total time: 18-20 mins

Ingredients:

  • 1 1/2 cups almond flour

  • 1/3 cup oat flour

  • 1/4 cup black strap molasses

  • 1/3 cup coconut sugar

  • 1/4 cup honey (use maple syrup to make vegan)

  • 1/4 cup almond butter (or any other nut butter)

  • 1 tbsp lemon juice

  • 2 tsp ginger

  • 1/4 tsp cloves

  • 1/4 tsp nutmeg

  • 1 tsp cinnamon

  • Dash of salt

  • 1 tsp baking powder

Frosting:

Simple Mills Vanilla Frosting - as much as your heart desires

Instructions:

Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. In a medium sized bowl, mix together black strap molasses, coconut sugar, honey, almond butter and lemon juice. In a small bowl combine almond flour, oat flour, spices, and baking powder. Pour the dry ingredients into the wet, and mix well. Roll dough into 12 small balls, and line baking sheet. With the palm of your hand, lightly press dough balls down to be flat. Bake in the oven for 8-10 mins, remove and let cool. These cookies will be slightly crisp on the outside, chewy on the inside, and full of all those festive spices! ENJOY!
