6 Ingredient Flourless Cookies
Cookies are my favorite, especially when they are SIMPLE to make. When I'm craving a cookie, I could easily reach for some packaged cookies, but I feel so much better taking the time to make some homemade. I find that I appreciate, and enjoy my food much more when I put the time into making it myself. Therefore, recipes that consist of minimal ingredients, and take little time to make are necessary to have! This is going to be one you want to save for those days where the cookie craving comes on strong, and you want cookies FAST! The outside of the cookie is a little bit crisp (right out of the oven), and the inside is moist, and chewy.** Personally, my favorite type of cookie! I used to bake cookies ALL THE TIME before I developed this healthy lifestyle of mine, and my then boyfriend, now fiancé LOVED it. So now I'm on a mission to make cookies with minimal, good for you ingredients, that he loves! Not to say regular cookies will never happen again, but its a fun challenge! :)
6 Ingredient Flourless Cookies
Makes: 14 cookies
Prep time: 5 minutes
Bake time: 10 mins
Total times: 15 mins
Ingredients:
1 cup cashew butter*
1/2 cup coconut sugar
1 egg
1 tsp baking powder
1 tsp vanilla extract
1/2 cup dark chocolate chips
Instructions:
Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper. In a medium bowl combine first 5 ingredients. Add in chocolate chips and fold in. Scoop out 2 tbsp balls of dough onto lined cookie sheets.* Bake in oven for 8-10 minutes, or until cookies appear a light golden brown color. Remove from oven and let cool on cookie sheet for 5 minutes. Transport cookies to cooling rack and let them cool completely.
*NOTE: these cookies barely spread, so if you like a thinner cookie, press down with a fork.
* Any nut butter will do. Make sure the nut butter has a relatively good amount of oils to prevent from having dry cookies.
**When these sat out overnight on the counter in an airtight container, I did notice that they lost their crispness, become a little delicate, and turned into a melt in your mouth consistency. I would store these in the refrigerator or freezer to ensure they don't become too soft and fall apart!
