Chicken Nuggets

Well I did it! I fulfilled my craving for some good ol' chicken nuggets, and I did it well! These are made with a few simple ingredients, and are gluten free because I used gluten free breadcrumbs.  However, you can definitely use panko bread crumbs if gluten free isn't something you prefer! Both options are going to be shared below. Pair these nuggets with some roasted sweet potato fries, and a nice salad like I did and you've got yourself a great meal! These were both mom, and fiancé approved, and thats a WIN in my book! These would be a GREAT option to make for the whole family, especially for any picky eaters who love fast food nuggets! 

Chicken Nuggets 

Prep time: 15 minutes

Cook time: about 15-20 minutes 

Makes: 18 nuggets 

Ingredients: 

GF NUGGETS

  • 1 pound ground chicken 
  • 1 egg (whisked) 
  • 1 cup Aleia's gluten free breadcrumbs (more as needed to coat the chicken) 
  • 1 tsp salt 
  • 1/4 tsp pepper 
  • EVOO oil for frying (enough to coat the bottom of the pan) 

NON-GF NUGGETS

  • 1 pound ground chicken 
  • 2 eggs (whisked) 
  • 1 cup flour
  • panko bread crumbs 
  • 1 tsp salt 
  • 1/4 tsp pepper 
  • EVOO oil for frying (enough to coat the bottom of the pan) 

Instructions: 

Preheat oven to 350 degrees Fahrenheit, and line a baking sheet with parchment. In a large bowl combine the ground chicken, with the salt and pepper. Scoop out 1 heaping tablespoon of the ground chicken mixture and form into a round nugget. 

GF NUGGETS

  1. Coat each nugget with egg, and then with bread crumbs. 

NON-GF NUGGETS 

  1. Dredge each nugget into the flour, then into the beaten eggs. 
  2. Coat each side with panko bread crumbs

Once nuggets are coated, set aside on baking sheet. Heat a medium sized, heavy bottom pan on medium heat and coat bottom of pan with EVOO. Quickly brown each side of the nugget and place back on the cookie sheet. Place browned nuggets into the oven, and cook until internal temperature is 165 degrees Fahrenheit. Serve with your favorite dipping sauce and ENJOY!
