Mexican Stuffed Delicata Squash

September 22nd, officially the first day of fall!!  I must say that Washington state makes it pretty easy to be ready for this new season. When the weather changes from 70, sunny, and humid, to 50, rainy, and cold within a week, you really have no choice but to be ready! :). From shorts, tank tops, and bikinis, to beanies, oversized sweaters, and boots! While this is sad for those of us who love summer...fall brings many lovely new things to look forward to, especially those relating to food. Pumpkin muffins, apple pie spiced oats (see previous recipe), scrumptious turkey chili, chicken noodle soup, and stuffed squash like the one you see here!

I made this squash the other night for my boyfriend and mom, and they LOVED it! Fall = tons of squash, and it's one of my favorite seasons because of this alone. As soon as I spotted delicata in the store I snagged it up and got to cooking. I hope you enjoy! 

Mexican Stuffed Delicata Squash

  • Serves: 2-4

  • Prep time: 10 minutes

  • Cook time: 20-30 minutes

Ingredients: 

  • 2 medium sized delicata squash

  • 1 pound ground turkey

  • 1 cup brown rice

  • 1/2 cup tomato sauce

  • 1/2 cup corn

  • 1 whole red bell pepper, diced

  • 1/4 tsp chipotle powder

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1/2 tsp cumin

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400 degrees F.

  2. Brown turkey in a large skillet over med-high heat. After meat has been cooking for about 2-3 minutes, add pepper, spices and tomato sauce. Allow pepper to cook until tender.

  3. Slice the squash in half, and scrape out the seeds with a spoon.

  4. While the meat is cooking,you may want to pop the squash in the microwave for about 1 minute to soften it up a bit.

  5. Once meat is almost fully cooked, add pepper, and cook until tender.

  6. Add brown rice, mix thoroughly, turn heat to low, and cover with a lid.

  7. Bake stuffed squash at 400 degrees F. for 20 to 30 minutes, until tops are browned and squash is soft. (can be pierced easily with a fork)

  8. Remove squash from oven, and fill with equal amounts of turkey mixture (save the rest

  9. Enjoy!
