Apple Pie Spiced Oats

Fall is upon us you guys! It's officially September and with that comes the cooler weather, color changing leaves, and hearty, belly warming recipes! Ever since getting into cooking and becoming a full time foodie I have grown to LOVE the changing of seasons. A change in season means different fruits and veggies to get creative with and a great way to change up the usual meals! Fall for me specifically means stuffed squash, chili, pumpkin flavored foods, spices like nutmeg, cardamom, and cinnamon, beanies, warm sweaters, and boots! I just LOVE it! While I most definitely miss summer and all the goodness that comes along with that sunny season, there is something just comforting and refreshing about a change! 

This oatmeal recipe is perfect to make on a cold autumn morning. When you want something hearty, but quick (only takes about 10mins to make on the stove top)! As well as a meal that is sweet, but allows you to get in some greens and an abundance of nutrients! Lightly sweetened, and balance with protein, carbs, and healthy fats, makes this an A+ breakfast to start your day with!

Apple Pie Spiced Oats

Serves: 1-2 **depends on your appetite that morning ;)

  • Prep time: 5 mins
  • Cook time: 10 mins
  • Total time: 15 mins

Ingredients:

  • 1/2 cup oats
  • 1 cup water ( or milk/nut milk of choice )
  • 1 egg white
  • 1-2 scoops collagen (I use Further Food, use my code FARETONED for 5% your purchase )
  • 1 tsp.  Maca powder ( I got mine, organic, at Trader Joes)
  • 1 Tbsp. Apple Pie Spice (can be made from scratch, *see below) 
  • 1 tsp. coconut butter (I use Artisana Organics)
  • 1 date, chopped
  • 1 Tbsp. Flaxseed meal
  • 1/3 cup raw, shredded zucchini ( I use a cheese grater to do this)
  • 1/4 tsp. Himalayan pink salt

Make your own apple pie spice: 

Makes about 1/3 cup

Ingredients: 

  • 4 tablespoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cardamom

Instructions:

Combine all spices, and store in small jar or spice container. 

Instructions:

In a small sauce pan, on medium-high heat, combine oats, water, and egg white, making sure to fully incorporate egg white into oats so that no clumps of egg occur. Allow oats to come to a boil and bubble, then reduce heat to medium to medium low. Add remaining ingredients and stir well. Cook until water is absorbed and oats are desired consistency, about 10 minutes) ENJOY!
