Quinoa Flour Waffles
Ever since becoming gluten free/dairy free I've been on the hunt for a good waffle recipe that is easy, made with minimal, good for you ingredients, and tasty! After discovering quinoa (pronounced: keen-wah) flour I thought what better flour to use for my waffles! No quinoa flour, no problem! Have a bag of uncooked quinoa? Simply pulse raw quinoa in a food processor or high speed blender until fully ground up. Start with the same amount of raw quinoa as you would need flour, but be sure to measure the homemade flour to be sure it is the same amount the recipe calls for. Quinoa flour is a good source of complex carbs , and it contains all of the essential amino acids, which made it the perfect base for my waffle recipe. I started out by simply just mixing quinoa flour, water, and baking powder together, plus any seasonings I desired depending on if I wanted a sweet or savory waffle. Surprisingly, with even just those few ingredients the waffles came out! While they were very durable, and still a waffle I could enjoy on a regular basis, they were a little too dense. So this time I added an egg, along with liquid, and while still more dense than your average waffle, a perfect nutritious addition to your breakfast. Load up your waffle with fresh berries, nut butter, maple syrup, or coconut shreds. OR given the great durability of these waffles use them as "bread" and make a breakfast PB & J ( I love fruit sweetened jam, cashew butter, and banana slices), or make them savory and add an egg, bacon and avocado!
Quinoa Flour Waffles
Serves: 2
Prep time: 5 minutes
Cook time: (depends on waffle iron) approx. 5-6 minutes
Total time: 10-11 minutes
Ingredients:
- 1/2 cup quinoa flour
- 1/4 cup non dairy milk (or water)
- 1 egg
- 1/2 tsp baking powder
- Pinch of salt
Spray oil of choice ( like Trader Joes organic spray olive oil, or coconut oil spray)
OPTIONAL: for a little added crunch add 2 tbsp. of my homemade granola (see previous recipes)
If making sweet:
- 1/2 tsp vanilla extract
- 1 tsp honey
- 1 tsp cinnamon
If making savory:
- 1 tsp Nutritional yeast
- 1/2 tsp Garlic powder
Instructions:
Preheat and grease waffle iron. In a medium sized bowl combine all dry ingredients, then add egg, and liquid mixing until well incorporated.
Note: You want a thicker batter than pancakes, but not TOO thick. The quinoa flour can be sticky once mixed with liquid. If needed add 1 tbsp. of water at a time to thin out batter. Also, quinoa has a distinct, nutty flavor, so keep this in mind when trying this recipe!
