Crunchy Golden Granola

I have been seriously craving some granola, and while I absolutely love the granola made by Purely Elizabeth, at $6 a bag I find it hard to buy sometimes. Especially with how fast I'll go through it... because it is SO delicious. So instead, I made my own... and honestly for this one batch it maybe cost me $3 (I would have figured this all out for you but I threw away my receipt... and to be honest math is not my strong suit anyways...) if not even LESS! I bought everything in bulk besides the oats, and used honey, coconut oil, and vanilla extract I already had on hand. It took no time at all to throw together, and it tastes amazing. (insert heart eye emoji here) My one suggestion (and perhaps something I'll do next time) is to add a bit more honey if you like it to have a chunkier granola. While mine came out super tasty, and crunchy, it is not clumped together due to the small amount of honey used to keep the sugar content lower. Just keep this in mind, and adjust accordingly! Use this granola to top smoothies, eat in a bowl with some homemade hemp milk (see previous recipe), add to your yogurt, or just take a handful as a snack on the go! With ingredients like oats, quinoa, millet, chia seeds, cashews, and walnuts you are getting healthy grains, and fats, as well as a small amount of protein making this the perfect addition to just about any meal. The millet and quinoa in this granola adds a delicious nutty flavor,and super fun crunch I really enjoy, and I hope you do too!

Crunchy Golden Granola

Makes: 4 cups

Prep time: 10 mins

Bake time: 20 mins

Total time: 30 mins

Ingredients:

  • 2 cups oats
  • 1 cup walnuts*
  • 1/2 cup cashews*
  • 1/4 cup chia*
  • 1/4 cup coconut*
  • 1/2 cup millet
  • 1/2 cup quinoa
  • 1/8 cup + 1 tsp. raw honey ( use 1/4+ if you want nice granola chunks!)
  • 1/8 cup coconut oil,melted
  • 3/4 tsp alcohol free vanilla extract
  • pinch of Himalayan pink salt

Instructions:

Preheat oven to 350 degrees F. In a medium bowl combine all dry ingredients, add wet and mix thoroughly making sure all dry ingredients are coated with the wet. Pour mixture onto a baking sheet spreading over the entire sheet. Bake for 10 minutes, mix around on sheet, and bake another 10 minutes. Keeping close eye that nuts don't burn. Baking times may vary. Bake until golden brown. Remove from oven and allow to cool completely (will get crunchy at this point) before transferring to storage container. Store in an air tight container. (I use a big mason jar) ENJOY!

* Note: You can use ANY nuts or seeds you want. Simply keep the same measurement and swap for whatever you enjoy! Sunflower seeds, almonds, even dried fruit would be delicious!
