Beet Hummus

This was one of those recipes that I just threw together in hopes something good would come out.... and HOORAY, it did! :) The addition of nutrient packed beets gives this hummus a slightly sweet flavor, but also a beautiful pink color! I don't know about you... but when my food is naturally colored a fun color like this it makes me just want to eat it even more! :) Did you know that beets are are high in vitamin c, fiber, magnesium, iron, and more?! Making them a great addition to this hummus, providing you with a boost of flavor and nutrients! Enjoy this hummus with raw veggies, crackers, on a rice cake, or even as a spread on a yummy wrap! If you simply just can't get yourself to eat beets.... even after knowing how good for you they are.... then simply leave the beets out of the recipe, keep all other ingredients the same and you'll have yourself a yummy, traditional garbanzo bean hummus!

Beet Hummus

Time: 10 minutes

Ingredients:

  • 1 can organic garbanzo beans
  • 1/2 cup reserved liquid (or water)
  • 3/4 cup boiled beets, cubed
  • 1 heaping Tbsp. Tahini
  • 1/2 lemon, juiced
  • 3 small cloves of garlic, or 1 large
  • 1 tsp. ground cumin
  • Salt and pepper to taste

Instructions:

Place all ingredients in a food processor and blend until smooth. Adding reserved liquid (or water) 1 tbsp at a time until desired consistency. ENJOY!
