Cajun Turkey Burgers

Who else is looking forward to summer weather, and grilling on the BBQ? As soon as the sun decided to make an appearance here in Washington state, burgers were on my mind.... so obviously this meant I had to come up with a yummy turkey burger recipe to share with you all! While these were actually grilled on the stove top, they can easily be grilled on the BBQ instead! Throw some zucchini, asparagus, bell peppers, and onion on there too, and you've got yourself a delicious, nutrient packed meal!

 I do enjoy a good quality beef burger every now and then, however, turkey is usually my go-to meat for making homemade burger patties. I love it because it's lighter than beef, and still very delicious! (ground chicken can be substituted as well). I add almond flour instead of breadcrumbs, which makes them completely gluten free! I personally, really enjoy the flavor/texture that the almond flour adds. The Cajun seasoning makes these a little spicy, the parsley and arugula add some freshness, the onion and garlic enhance the flavors, and overall these just taste good! I typically make mine into sliders and eat on sweet potato "buns" or wrapped in butter lettuce leaves, however they will taste great whatever way you choose to enjoy them!

Cajun Turkey Burgers

Makes: 4, 1/4 pound patties, or 9-10 slider patties

Prep time: 15 minutes

Chill time: 15 minutes

Cook time: approx. 6-10 minutes

Total time: 35-40 minutes

Ingredients:

  • 1 pound ground turkey ( I tend to use lean ground turkey, but any fat % will work!, the higher the fat the juicier the burgers)
  • 1/3 cup onion (sweet, or red are what I have used)
  • 1 Tbsp fresh parsley, finely chopped
  • 1 egg
  • 3 Tbsp. Almond flour
  • 1/4 cup arugula, chopped (spinach works too)
  • 1 medium clove garlic, minced
  • 1 tsp Cajun seasoning ( I used Safeway's O-Organics brand)
  • 1 tsp Himalayan pink salt

Instructions:

Add all ingredients to a medium sized bowl, and mix thoroughly (being careful not to over mix, otherwise the burgers will come out tough). Spray plate(or two) with oil, form turkey mixture into balls, and flatten into patties (I use an ice cream scoop to achieve a uniform size), and put on plate. Put in the fridge, and chill for 15 minutes. Meanwhile, heat a skillet to medium high heat. Spray skillet with oil, and begin cooking patties. Cook 3 minutes on 1 side, flip, 3 minutes on the other or until internal temperature is 165 degrees Fahrenheit.
