Loaded Guacamole
If you're obsessed with avocado like me, then THIS is the dip for you! This makes a delicious topping for tacos, dip for tortilla chips (and/or veggies), or appetizer to take to your next get together! My mom shared this recipe with me, and boy am I glad she did. This is going to be made over and over again, all summer long and I'm feeling pretty excited about it!
Loaded Guacamole
Makes: about 2 cups
Time: 15 minutes
Ingredients:
- 2 avocados
- 1/3 cup roasted corn *
- 1/3 cup cherry or grape tomatoes, diced
- 1 whole lime, juiced
- 1 Tbsp cilantro, diced
- 1/8 cup minced onion
- 1/8 cup seeded, diced, tamed pickled jalapeño, OR fresh jalapeño.
- 1 small clove garlic, minced.
- 1/8 tsp cumin
- Pinch of salt
- Optional: 1/2 tsp Trader Joe's chili lime seasoning
Instructions:
Mix together all ingredients, and serve with tortilla chips.
* Can be purchased frozen at Trader Joe's, you can also use frozen sweet corn, or cut corn off the cob)
** This is best made day of, the lime helps to prevent browning, however for the freshest dip, and brightest green color, serve day of.
