Apple Pie Muffins

As you can probably tell from my recipe feed/ Instagram I have been a baking maniac lately. To be honest I've been craving comfort food, and sweets, and that is where my motivation to bake is coming from. Rather than going out and buying a baked good, I like to make it from scratch! This allows me to appreciate my food, and truly enjoy it when I sit down to eat it! I love knowing whats going into the food I eat (ingredients and emotions). I read a book for one of my classes, and it talked about how our food absorbs our emotions. I truly believe that if you cook or bake in a happy mood, where you are enjoying every moment, this will come out in the final product of what you're creating, and it will taste delicious! Think I'm crazy? Give it a try for yourself! These muffins were a creation that stemmed from me not wanting to waste these sautéed apples I had made for a recipe video I was filming. Instantly I thought muffins! I started searching Pinterest, but really struggled to find a recipe that included ingredients I had on hand. Then my mom came to the rescue! She found a muffin recipe that was neither gluten free or dairy free, and helped me to make the appropriate substitutes to suit my needs! We weren't completely sure how they were going turn out... but boy were we happy with the outcome! While the consistency is a LITTLE crumbly (especially right out of the oven) the flavor is INCREDIBLE. So there you have it! A recipe thrown together in a time of creativity, that resulted in a success! 

Apple Pie Muffins 

Makes: 8 muffins

  • Prep time: 10 minutes 
  • Bake time: 15-20 mins 
  • Total time 25-30 mins 

Ingredients: 

  • 1.5 cups almond flour 
  • 2 tsp baking powder 
  • 1/4 tsp baking soda 
  • 2 tsp apple pie spice (can be made homemade * see below) 
  • 1/2 cup coconut sugar
  • 1/2 tsp salt (I used Himalayan pink salt) 
  • 1 egg
  • 2 tbsp coconut oil, melted 
  • 1/2 cup milk of choice ( I used homemade pecan/walnut milk) 
  • 1 tsp vanilla extract  
  • 1 cup sautéed apples (I  mashed mine after cooking)

Make your own apple pie spice: 

Makes about 1/3 cup

Ingredients: 

  • 4 tablespoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cardamom

Instructions:

Combine all spices, and store in small jar or spice container. 

Instructions: 

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease or line a muffin tin with cupcake liners 
  3. Preheat skillet to medium heat, chop 1 small apple into bite sized cubes and sauté with cinnamon until soft. Mash with fork or bottom of a glass in a separate bowl depending on the consistency you prefer.
  4. In a large bowl combine first 6 ingredients. 
  5. In a separate bowl combine the last 4 ingredients (not the apples yet) and mix, making sure to whisk the egg in. 
  6. Pour wet ingredients into dry and mix until fully combined. Be careful not to over mix, as this makes the final product more tough. 
  7. Fill muffin tin compartments 3/4 full and bake for 15-20 minutes or until toothpick comes out clean. 
  8. Allow to cool, remove from muffin tin, and enjoy! 
  9. Store in fridge for up to a week, or freezer for up to a month!
