Chocolate Mug Cake

Ever crave a piece of chocolate cake but don’t want to go to the trouble of making an entire cake? Plus, having a whole cake around comes with the responsibility of not eating the entire thing faster than you should... :) Well have no fear! I have a solution for you! This chocolate mug cake is made with simple ingredients, sweetened with coconut sugar, and takes less than 2 minutes to make!! While I know this may sound too good to be true, it’s not. PROMISE! This cake is lightly sweetened, packed with protein, topped with chocolate chips, and fluffy as can be. It can be enjoyed for breakfast, or as a post workout snack paired with some yogurt and/or fresh fruit. It can also be enjoyed for dessert, paired with your favorite ice cream or some whip cream! This chocolate cake is a better option than a store bought or packaged pre made cake mix, not only because of it’s simple ingredients, but because it contains protein! Protein when paired with simple carbohydrates or sugar helps maintain our blood sugar levels. It keeps us feeling full and satisfied AND we get the satisfaction of eating chocolate cake. I’d say that is a WIN! 

Chocolate Mug Cake  

 

Serves:1 

  • Prep time: 3 minutes  
  • Cook time: 1.5-2 mins  
  • Total time: a whole 5 minutes!!!!!  

Ingredients:

  • 1.5 tbsp coconut flour
  • 20 G protein powder (I used hemp protein)
  • 1 egg
  • 1 tbsp. cocoa powder 
  • 1 tsp nut butter
  • 1/4 cup nut milk
  • 1 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp Vanilla extract 
  • Optional: dark chocolate bar, or chocolate tips for topping, as much as your heart desires.

Optional: stir in chocolate chips or nuts of choice, or use as topping. 

If you prefer things sweeter, add another 1 tsp or two of coconut sugar to your batter. 

Instructions: 

  1. Combine all dry ingredients in one bowl.
  2.  In a separate bowl whisk together the egg, vanilla extract and nut butter. Add to dry ingredients and stir until well combined
  3. *Microwave for 1 min 30 seconds. Top with chocolate chips and microwave for another 10 seconds.
  4. Remove and enjoy! Top with coconut whip cream, nuts, fresh fruit. Pair with ice cream or whip cream for delicious dessert! 

* microwave times may vary depending on wattage of microwave. Start at recommended time and add 20-30 seconds at a time if more cooking is necessary.
