Spiced Baked Donuts

Have you ever developed a craving for a specific food, but no matter how good it sounds you just haven't had the opportunity to fulfill it? Well, if you have then you feel me when I say I have been CRAVING a donut for months now, and the struggle has been real! :) It wasn't a craving that would always be there. It was more of those cravings that would pop up when I would hear the word donut or see one on t.v. However, when it did pop up, my mouth instantly began to water. But because life is busy, and because I'm MOSTLY gluten free and dairy free,  I never saw the perfect opportunity to go to the donut shop, and get a donut. I let the craving pass, and then pop up again, and then pass, and then pop up again. That is.... until I had a brilliant idea (and some time). The idea to make homemade BAKED donuts! I didn't have to travel anywhere, had all the ingredients in my kitchen, AND they are both gluten free and dairy free! So while I was craving one of those sugar filled, yeast donuts from Frost or TopPot donuts, this was a good way to temporarily curb my donut craving! That is.... until I find the perfect opportunity to get a donut with someone I love and enjoy every bite in the moment! :) While I do have food intolerances, and I try my best to stick to a diet mostly without them. I  am getting to the point in my life where I don't want to have ANY restriction of what foods I can and can't eat. Therefore, if I have people to share a special food with, in a good place, then I am going to do it despite my intolerances! Did you know that our bodies process things better when we are in a happy state of mind, and when the food is associated with good feelings and enjoyed with good people? Knowing this, I always try to truly make the most of my experiences when I want to eat something that normally my body wouldn't love me to have! Because life is too short to miss out on sharing a piece of cake with my boyfriend, going out for some good Ol' ice cream, or having a real sugar filled yeast donut!! That being said...... here is a donut you can enjoy anytime, any place, guilt free, and without the worry of a tummy ache happening after (if you're gluten free/dairy free like me)! 

SPICED BAKED DONUTS

Makes: 9 donuts  

Prep time: 10 minutes

Bake time: 25 minutes

Total time: 35 minutes

INGREDIENTS: 

  • 1 cup (120g) oat flour - oats ground up into a flour in the food processor. Use gluten-free if allergic/intolerant
  • 1/2 cup (100g) ground almonds 
  • 1/2 cup ground pecans 
  • 1 tsp baking powder
  • Apple Pie Spice* see below how to make your own 
  • 4 tbsp coconut or brown sugar (I used coconut sugar from the bulk section of my local grocery store) 
  • 3 tbsp maple syrup or honey (I used honey from the bulk section of my local grocery store) 
  • 4 tbsp milk of choice ( I used homemade cashew milk)
  • 4 tbsp coconut oil. 
  • 4 tbsp nut butter (I used sunflower seed butter) 
  • 1 large egg (Can sub flax eggs to make vegan -- 2 tbsp ground flaxseed + 6 tbsp hot water) ** see below for how to make

 INSTRUCTIONS: 

  1. In a large bowl, mix the flour, ground almonds, baking powder, sugar, salt and spices.
  2. Pour in the milk, coconut oil and maple syrup.
  3. Add the almond butter and set flaxseed mixture. Mix well to combine.
  4. Grease a silicone doughnut baking tin and divide the mixture evenly between them. (Look on Amazon if you need to purchase one at a decent price) 
  5. Bake for 25 minutes. Leave to cool completely before attempting to remove them from the mold.

** Make the flax 'eggs' by mixing 2 tbsp milled flaxseed with 6 tbsp hot water. Leave to set for 15 minutes.

MAKE YOUR OWN APPLE PIE SPICE: 

Makes about 1/3 cup

Ingredients: 

  • 4 tablespoons ground cinnamon
  • 1 1/2 teaspoons ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cardamom

Pumpkin Cashew "Cream cheese" 

Makes about 1/2 cup 

Ingredients: 

  • 1 cup cashew pulp OR ground cashews (soaked for at least 4 hours before hand) 
  • 1 tbsp honey (1 tsp more at a time if you like it sweeter until desired sweetness!) 
  • 2 tbsp coconut cream (from a can of coconut milk left in the refrigerator over night) 
  • 1 tsp pumpkin pie spice (more if you prefer is more spiced!)
  • Salt to taste 

Instructions:

In a food processor or highs speed blender combine all ingredients and blend until desired consistency (the smoother the better)
