Pecan Crusted Salmon (one pan/ 30 min meal)

This was one of those “I’m bored of what I’ve been making, I’m going to experiment with something new” meals. Which just so happened to be a success! For this meal all you need is a few simple ingredients, one sheet pan, and 30 minutes of your day! Making this a perfect meal for a busy week night, when you want something nutritious and delicious, but don’t want to spend a ton of time cooking!

Pecan Crusted Salmon/ Brown Rice / Roasted Veggies

Prep time: 10-15 mins

Cook time: 15-20 mins

Total time: 30 mins

Serves: 2-3

Ingredients:

  • .75 pounds salmon

  • 1 tbsp pesto

  • 1 tbsp lemon juice

  • 1 tsp honey

  • 1/4 cup finely chopped pecans

  • 1 bunch asparagus

  • 1 bag green beans

  • salt

  • garlic powder

  • pepper

  • 1 bag frozen microwavable brown rice

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit, slice salmon into two equal pieces.

  2. On a large sheet pan, place 1 bunch asparagus, stems removed, and desired amount of green beans. Coat in spray avocado oil, salt, pepper, and garlic powder, place in oven.

  3. Whisk together Ingredients for sauce, drizzle equal amounts over each piece of salmon, sprinkle with pecans.

  4. Remove veggies from oven, create a space in the center of the sheet pan for the salmon, and place skin side down.

  5. Put sheet pan back in the oven & cook 7-10 mins until salmon internal temp reaches about 130 degrees Fahrenheit.

  6. Remove from oven and let rest for about 5 mins, fish is ready when flakey. Microwave brown rices according to package instructions)

  7. Serve with green beans, asparagus, brown rice, and enjoy!
