"Cheesy" Cauliflower Tots
If you're on the hunt for some gluten free/dairy free tots you've come to the right place! Pair these with your favorite dipping sauce for a great snack or a yummy and nutritious addition to a meal!
Cheesy Cauliflower Tots
Makes: 18-24 tots
Ingredients:
- 1 lb bag riced cauliflower ( I got mine from Trader Joe's)
- 1 teaspoon coconut oil
- 1/4 cup onion, finely minced
- 2 garlic cloves, minced
- 1/2 cup nutritional yeast (or grated Parmesan cheese)
- 1/4 cup parsley
- 1/2 tsp pepper
- 1 tsp. salt
- 1/4 to 1/2 cup brown rice flour (can sub almond flour or gluten free breadcrumbs) *
- 1-2 eggs *
Start with 1/4 cup flour + 1 egg, mix, and see if the mixture is easily formed into tots, if not, add another 1/4 cup + 1 egg, mix and then form.
Instructions:
- Preheat oven to 400 degrees Fahrenheit. Oil or line a baking sheet with parchment paper.
- Heat a pan to medium heat, add coconut oil, and sauté onion 2-3 mins until transluscent, add garlic sauté 3 mins, being careful not to let it brown.
- In a bowl combine riced cauliflower, nutritional yeast, parsley, salt and pepper and mix together. Fold in onions and garlic. add salt to taste as needed.
- Add brown rice flour and egg, and mix thoroughly,
- Form into small tater tots and place on oiled or parchment lined baking sheet. Bake 15-20 minutes on each side or until crispy brown. Option: Broil for last 5-10 mins per side to really crisp them up!
- Serve with favorite dipping sauce.
