"Cheesy" Cauliflower Tots

If you're on the hunt for some gluten free/dairy free tots you've come to the right place! Pair these with your favorite dipping sauce for a great snack or a yummy and nutritious addition to a meal! 

Cheesy Cauliflower Tots

Makes: 18-24 tots

Ingredients:

  • 1 lb bag riced cauliflower ( I got mine from Trader Joe's) 
  • 1 teaspoon coconut oil 
  • 1/4 cup onion, finely minced 
  • 2 garlic cloves, minced 
  • 1/2 cup nutritional yeast (or grated Parmesan cheese) 
  • 1/4 cup parsley 
  • 1/2 tsp pepper 
  • 1 tsp. salt 
  • 1/4 to 1/2 cup brown rice flour (can sub almond flour or gluten free breadcrumbs) *
  • 1-2 eggs *

Start with 1/4 cup flour + 1 egg, mix, and see if the mixture is easily formed into tots, if not, add another 1/4 cup + 1 egg, mix and then form. 

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit. Oil or line a baking sheet with parchment paper.
  2. Heat a pan to medium heat, add coconut oil, and sauté onion 2-3 mins until transluscent, add garlic sauté  3 mins, being careful not to let it brown. 
  3. In a bowl combine riced cauliflower, nutritional yeast, parsley, salt and pepper and mix together. Fold in onions and garlic. add salt to taste as needed. 
  4. Add brown rice flour and egg, and mix thoroughly, 
  5. Form into small tater tots and place on oiled or parchment lined baking sheet. Bake 15-20 minutes on each side or until crispy brown. Option: Broil for last 5-10 mins per side to really crisp them up! 
  6. Serve with favorite dipping sauce.
