Coconut Coffee Breakfast Cookies

I was so excited when I received my functional flavor protein from Nuzest in the mail. The flavors sounded so yummy, I couldn’t wait to come up with a recipe utilizing them! These cookies are made with super simple ingredients, very minimal sweetener (honey), and they taste oh so good! I am not a coffee drinker, but the flavor of coconut coffee in these cookies is PERFECT! I have been eating them as a quick pre workout breakfast for a small and balanced snack with a boost of energy!  

Coconut Coffee Cookies 

Makes: 12-24 cookies   

Prep time: 10 mins 

Bake time:   10 mins 

 Ingredients: 

  • 1 cup oat flour
  • 1/3 cup Nuzest coffee + coconut protein powder (use my code Healthyhappy for 15% off your order) 
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup + 3 tbsp milk (whole, hemp, almond, coconut, cashew) 
  • 1 tbsp raw honey
  • 2 tbsp sunflowerseed spread
  • 1 egg

Instructions: 

Preheat oven to 350 degrees Farenheit. In a medium bowl combine oat flour, protein powder, baking soda + powder, and combine. In a small bowl combine the egg, milk, honey, and sunflower seed spread. Pour the wet into dry, and mix until well incorporated. Batter should be sticky, not too wet and not too dry. Scoop 2 tbsp servings of the dough onto a cookie sheet lined with parchment. Press a fork into the tops of the cookies to flatten slightly. These cookies will not spread what so ever. However, if you do not press them down, they will still cook through but will just take a little longer. (See top  cookie in the picture compared to the rest, this was not pressed down)
