Vegan PEANUT BUTTER Chocolate Chip Cookies

I bring you…… vegan peanut butter cookies! I don’t know about you, but a cookie that is slightly crispy on the exterior, and chewy on the interior is a bomb AF cookie in my book. The coconut sugar helps to make this happen. Cook for a shorter period of time for chewier cookies….and a longer period of time if you want crispier cookies!

VEGAN PB Chocolate Chip Cookies

Makes 10-12 cookies

Prep time: 10 mins

Bake time: 10-16 mins

Ingredients:

  • 2 cups almond flour 

  • 1/2 tsp baking powder   

  • 1/4 tsp salt

  • 1/4 cup + 1 tbsp peanut butter

  • 2 Tbsp coconut sugar

  • 1/4 cup + 2 Tbsp maple syrup 

  • 1 tbsp water 

  • 1/2 tsp vanilla 

  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a medium bowl combine almond flour, baking powder, and salt.

  3. Mix in PB, coconut sugar, maple syrup, water, and vanilla.

  4. , Mix thoroughly until thick dough forms, then fold in chocolate chips.

  5. Form into balls, and place on cookie sheet. Gently press down until about 1/2 inch thick. Bake for 10-12 mins for chewy cookies, 12-14 mins for a good in betweener, and 14-16 mins for crispy cookies.
