Queso Cashew Cheese (Vegan)
If you like cheesy things…. but can't have dairy….. then this is the “cheese” for you!!! I was inspired to make this after making a dip from another blogger that included a dairy free cheese sauce, and I got the idea to make it into a queso type dip when I pulled out my Siete Foods cashew queso dip and thought about how darn espensive it is to buy! Health food products are great, a lot of them these days containing minimal, good for you ingredients. However with good quality comes an increase in price. I also realize that not everyone has access to certain products. This is where the idea to make this came about. Using simple ingredients that can be found anywhere!
Queso Cashew Cheese
The perfect dip to add to tacos, nachos, or to dip some chips into! Creamy, with a little bit of spice!
Makes: 1.5 cups

- 1 cup cashews,soaked for 1 hour
- 1/2 cup orange peppers, sautéed
- 1/4 cup full fat coconut milk
- 1 tsp. apple cider vinegar
- 1 Tbsp. lemon juice
- 2 Tbsp. nutritional yeast
- 1 tsp. juice of fire roasted tomatoes
- 2 tsp. garlic powder
- 1/4 tsp. red pepper
- 1/4 tsp. hot sauce
- salt and pepper to taste
- In a bowl soak cashews in hot water.
- Once the hour is almost up, saute peppers until tender.
- Place all other ingredients into a high speed blender, and blend until smooth.
