"Everything Yummy" Oatmeal Cookies

Last day of college classes yesterday, and I am coming at you with a new recipe!!! To say I feel GREAT would be an understatement. These cookies are most definitely celebratory cookies! This is just the beginning of LOTS and LOTS more recipes to come. I am SO looking forward to being more active on my blog. Monday June 25th, I graduate with my Bachelor's of Science in Nutrition. Which means I OFFICIALLY have my degree in something I am extremely passionate about. I am so excited to use my blog as a place to share my knowledge with you all, and I hope you'll continue following me on this journey called life! And now..... ENJOY these cookies! The aquafaba (explained below) gives these cookies the most PERFECT crispy outside (when fresh out the oven) , and chewy inside. Oh and my mom said these are the best cookies she has ever eaten..... (and she has picky taste buds hehe...) So you should obviously make them ASAP!!! 

"Everything Yummy" Oatmeal Cookies

 

Makes : 10

  • Prep time: 40 mins (includes dough chill time) 
  • Bake time: 12-15 mins 
  • Total time: Approx. 1 hour 

 

  • Ingredients : 

  •   3/4 cup oat flour 
  •   3/4 cup rolled oats
  • 2 TBSP. flaxseed meal 
  •  1/4 cup unsweetened coconut chips (optional)
  •  1/2 cup dark chocolate (chips or chopped bar) 
  • 1/2 cup toasted pecans (optional)
  • 1/3 cup packed coconut sugar
  • 3/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/4 cup aquafaba (the brine/liquid in a can of chickpeas)
  • 2 Tbsp pecan butter* (or other nut or seed butter)
  • 3 Tbsp vanilla bean ghee, melted (or coconut oil)  
  • optional: 1/2 tsp vanilla extract

Instructions: 

  1. In a large bowl, combine the first 9 dry ingredients. 
  2. In a separate bowl add 1/4 cup of garbanzo bean liquid, and whisk or use a hand mixer to whip until light peaks form. (You want the liquid to turn into a white fluffy foam, this is aquafaba) 
  3. Add the remaining 2-3 ingredients into the bowl with the aquafaba, the foam will deflate ( this is OK) whisk together. 
  4. Add the wet ingredients to the dry and combine well. The dough will be sticky and a little crumbly. 
  5. Cover and chill for up to 30 minutes in the fridge. Preheat oven to 350 degrees F. 
  6. Form dough into 10 round balls, place on a cookie sheet, and gently flatten.  
  7. Bake in the oven for 12-15 mins, remove and let cool before eating. 
  8. ENJOY
