Creamy Millet Porridge

You may know millet as a grain that is often found in birdseed. BUT thats not all its good for, it's great for us humans to consume as well! Following a mostly gluten free diet due to intolerances, I have found it can be challenging to consume a variety of whole grains. I was bored of eating oats, and quinoa all the time and I wanted to try something NEW! Therefore, I did some research on some gluten free grains and millet popped up as one to try! So I cooked it up into a porridge for my firs time, and fell in love! The texture when cooked with some milk (or nut milk) and made into a porridge is ridiculously creamy, and if you add a little less liquid and prefer to make it more "rice" like, it is a whole different consistency, but super tasty as well. The great thing about millet is that it is super versatile, and can easily be used in a sweet, or savory dish. It all depends on the seasonings/spices you used to flavor it! As you may know by now, I'm obsessed with all things fall, so this millet porridge is loaded with the fall flavors. It is QUITE delicious, and something I can make a big batch of and then eat throughout the week. Which I LOVE! 

Consuming millet is great because it's a very easily digested whole grain. It's full of fiber, and contains a good amount of protein as well. It also contains nutrients such as vitamin b3, magnesium, calcium, manganese, and more! So why NOT switch things up, and give it a try?! :) 

Creamy Millet Porridge  

Ingredients: 

  • 1/3 cup Millet
  • 1 cup coconut milk 
  • 3/4 cup water 
  • Dash of himilayan pink salt 
  • 5 scoops further food collagen powder 
  • 2 tbsp barleans pumpkin, chia, flax, coconut, quinoa digestive blend 
  • 2 tsp cinnamon
  • 1/4 tsp cloves 
  • 1/4 tsp nutmeg 
  • 1/4 tsp ginger 

Optional: to individual bowl add 1 tsp coconut sugar OR 1 date chopped. 1 tsp cashew butter OR homemade coconut whip cream. And/OR, 1/2 Apple chopped and sautéed in coconut oil. Also delicious to add chopped nuts or pumpkin seeds! 

Instructions:

Bring to a boil, and then cover and simmer for about 25 minutes without stirring, or until desired consistency (until liquid is absorbed to your liking)

Once it's done stir in last 6 ingredients, serve and enjoy!
